Fish In A Bag (serves 4)
2 desiree potatoes
4 x 200g fillets of fresh reef fish
1 lemon (thinly sliced)
12 cherry tomatoes
1 thinly sliced zucchini or bunch of asparagus
2 small garlic cloves, sliced finely
3 tsp dry white wine
20 g butter
herbs to taste – thyme and parsley are perfect
1. Preheat the oven to 200g. Parboil potatoes in saucepan of water (7-8mins) or microwave (2min approx) Potatoes are ready when a skewer can be inserted with little resistance. When potatoes are cool, slice thickly.
2. Cut 4 pieces of baking paper (about 3 times the width and twice the length of the fish fillets). Lay the potato slices in a line down the centre of each piece of baking paper. Top with the fish fillets and lemon slices. Add tomatoes, garlic, sliced zucchini and/or asparagus. Drizzle over the white wine and place a small knob of butter on top. Scatter the thyme.
3. Fold the paper over the fish and tie the ends like a bonbon ensuring the parcels are air tight. Place on the baking trays and bake in the oven for 7-8 minutes.
4. Serve fish on individual plates, still wrapper. Serve with lemon wedges, parsley and a side salad.
